Located in Tainan Yongle Market, there are many good shops in this area. When it comes to eel noodles, the first choice for beginners is Huang's Eel Noodles, which have a balanced flavor; then you can choose to challenge the vinegared salty version from A Jiang, or go for the sweet and spicy version at this place called Fu Sheng Snacks, which offer two distinctly different styles.

I ordered the dry-fried eel with oil noodles, and the main flavor was quite sweet with a hint of spiciness. The taste of the eel itself was masked (unlike at A-Jiang, where it is wrapped in a vinegar sauce). The oil noodles were quite flavorful, and the bowl and plates used were also attractive. However, I'm not very fond of overly sweet seasonings, and considering there’s often a long wait in line, I’ll leave this place for travelers who enjoy this flavor in the future.
The clam soup is even more impressive, with a clear and fresh broth. The shredded ginger pairs well with the green onions, and while there aren't many clams, they are all quite large and plump.
