There are many famous eel pasta restaurants in Tainan. Just like turkey rice is to the people of Chiayi and meatballs are to the people of Changhua, every Tainanese has their own ruler and their own preference for eel pasta. name

Fusheng Snacks is located on Guohua Street, where there are many snack bars. We arrived at around 7pm on Saturday, just in time to catch the last available table. Then we saw people starting to queue up. By the time we were about to leave at 7:30, it was already there. There are more than 15 people in line
Before you take a seat, the waiter will ask you what you want to eat. Just order verbally. It takes about 20 minutes for the food to be served.
Almost all shops selling eel pasta in Tainan sell two types of eel pasta, dry and wet. The dry one is stir-fried, while the wet one is more like noodles or soup noodles.
If you can only choose one, I highly recommend the dry-fried one!

The portion of noodles is not big, just put a pack of pot-roasted pasta. The noodles themselves are a bit spicy, and the more you eat, the spicier they become. I don’t know why 😂
I have eaten dry-fried eel pasta from other restaurants before, and the salty taste of pepper is usually more prominent, but the sweetness of their dry-fried eel pasta is still outstanding. Although I have a southern stomach that loves sweetness, Still think it's a bit too sweet
There are 5 large pieces of eel, and the texture is very crispy. However, the eel itself has no taste, so it is better to eat it with noodles.
Overall, I personally think Fusheng Snacks’ eel pasta performs well. The main reason is that the pot gas doesn’t seem to be forced out. People who like sweeter flavors will probably like it, but for me, it still doesn’t win. My top three Tainan eel pastas: Ah Jiang, Fulai, Chengbian Zhenwei
