If you haven’t tried it, you should have heard of the famous restaurant Lin Chongming. I stopped by to visit this time. I once received a Lin Chongming gift box from a relative. It was so sweet when cooked that it tasted very different. The taste of eating it on site this time was very different from that of the gift box. There are more, and the food on site is much more delicious.
The four of us came to dine and ordered a casserole with fish head, chicken rice, and various side dishes (white bitter gourd, green bitter gourd, pig heart, corn shoots). The side dishes were not seasoned at all and were served directly after being boiled. Then attached with dipping sauce, the bitter melon and corn shoots are super crispy.
The fish head in casserole has a flavor that you would not normally encounter. The cabbage and tofu are very tasty, but be careful with the fish bones. It felt a bit salty after eating, so you can bring something to drink.
In the 45th year of the Republic of China, Lin Chongming's father set up a food stall at the Wenhua Road night market to support the family. Apart from running a stall, his usual hobbies are fishing and dancing. Because his father caught too many fish for the family to eat, he decided to sell his private dishes at a stall, in addition to giving them to friends. Unexpectedly, customers all praised the deliciousness of this private kitchen dish and asked to make it again. In order to meet the needs of customers, he officially added this private dish to the menu, thus starting the fate of casserole fish head, which is also the origin of one of Chiayi's delicacies today, "Lin Chongming Casserole Fish Head"...
✅Casserole dish + fish head meat: Although this dish is written to serve 4 to 5 people, it actually only contains chain fish heads, chain fish meat, some cabbage, tofu, bean skin, fungus, etc. You won’t be full if you eat the casserole alone (but you can refill the soup). The soup base tastes like sand tea and has a slightly sweet taste. If you don't like salty and sweet taste, you may not be used to it. The ingredients inside are all very tasty and the texture is good, but the fish tastes dry and tough because it is fried.

This time I ate at the main store, but there are also branches nearby. Although there are quite a lot of people queuing up, the table turnover rate is very high, so you don’t need to wait for too long!
This is a very well known place for fish head stew, and we went with quite a large party. There was parking pretty close by as well and the wait wasn't too bad either for how crowded it was outside. Most people thought the chicken rice was great and the soup was decent, perhaps slightly overhyped but I enjoyed it. Tofu was nice and tender, and not too spicy, and the stew itself was salty and sweet, perhaps a little too much so. And the fish was fresh and tasty, especially the collar flesh. You can refill the soup as well. Service is quick and efficient. Not sure if I would go there again but worth going at least once just to experience it!
