Chuhyu Series First Experience - Teppanyaki Restaurant
This time, I chose the Chuhyu series teppanyaki, which costs $1880 + 10% per person. I also specially celebrated a birthday, and the owner thoughtfully prepared candles to enhance the atmosphere.

A La Carte Beverages

  1. Tianlan Mountain Plum Wine $340/120ml
    Made with 100% plums from Saitama Prefecture, it has a warm taste, moderate sourness, and a rich flavor.
  2. Shirasasa Lantern Fruit Wine $420/120ml
    With the sweet scent of lantern fruit, its taste resembles a combination of mango, pineapple, and mandarin orange. Preferred 1 > 2.

Meal Items:

  1. Bluefin Tuna / Ossetra Caviar / Cotton Tofu / Cilantro Sprouts (Nagasaki)
    The caviar is not fishy and pairs refreshingly with the tofu and cilantro sprouts, making it a great appetizer.
  2. Scallop / Sprouts / Corn / Ginger (Hokkaido)
    The scallop is fresh and sweet, and the finely shredded ginger gives a unique texture when combined with the scallop.
  3. Snow Crab / Orange / Shiso (Korea)
    The crab meat is rich, with crab roe adding more flavor, and the shiso provides a fragrant touch.
  4. Cod / Fresh Yuba / Clams / Grilled Nori (Hokkaido)
    The cod is tender, but the clams are somewhat bland in flavor.
  5. Abalone / Old Hen Soup / Maitake Mushrooms (South Africa)
    The abalone is chewy and springy, and the rich chicken soup is very memorable.
  6. Shark Fin / Banshu Soba / Mountain Celery (Taiwan)
    The soba has a soft texture, and the sauce is similar to buckwheat noodles, overall average.
  7. Japanese Black Beef / Round Eggplant / Pine Nut Miso / Maldon Sea Salt / Wasabi (Kagoshima)
    I upgraded to Japanese Black Beef fillet (+$560), which is tender with rich marbling, and the varied toppings allow for a change in taste.
  8. Puff / Squid
    The puff pastry is soft, and the squid is presented in the form of shrimp cake, offering a delightful range of flavors.
  9. Seven-Star Rice / Nara Pickled Watermelon / Leek (Hokkaido)
    Presented as clay pot rice, I could choose a normal or larger portion, and the taste was quite good.
  10. Miso Soup / Makunouchi (Gifu)
    Traditional miso soup, with an average taste.
  11. Matcha Cheese Cake
    The matcha and cheese flavors do not stand out, and the presentation is average, but adding a candle gives it +1 point.
    Side Dish: Shiso Pickled Radish
    Refillable, this side dish works well to balance the richness of the meal.

A La Carte
Kizuna (+$1000)
Heard it was a must-order signature dish, and it did not disappoint. The fish is cooked perfectly, rich in fat and melts in the mouth.

Overall Evaluation
The dining environment is quiet with not many guests, making for a pleasant overall experience. Celebrating a birthday here also made me feel the owner's thoughtfulness, and I would like to try another Chuhyu sushi if given the chance.
