They focus on Australian Wagyu and American beef, which I think is a perfect combination for enjoying big bites of meat and drinks since it’s relatively not too greasy, and the prices are reasonably fair. The thick slices of beef tongue are delicious, the American beef belly is spot on, and the Australian Wagyu brisket and triangle cuts are also quite beautiful. The most impressive is the culotte, which has a hint of creamy flavor with tender, juicy meat—perfection! Of course, you still need the yam, zucchini, and scallion onion mixed rice, which I love.
