The waiting time for Ichiran in Taiwan has become extremely exaggerated, roughly 4 hours, which is essentially the time from lunch to dinner, or dinner to a midnight snack. If I didn't have something to do nearby, I definitely wouldn't wait.
Ichiran Ramen's quality is generally very consistent, but to be honest, it's definitely not worth waiting 4 hours for a bowl of ramen. I guess it will be hard to visit again in the future, as the waiting time has reached an unacceptable level.
Although Ichiran in Taiwan is quite expensive and very crowded, I still occasionally want to eat there.
What impresses me most about Ichiran Ramen is the consistency of the flavor; whether eating in Japan or Taiwan, the taste is almost identical! Just this aspect is quite amazing (although some people think Ichiran ramen is just instant noodles cooked by someone 🤣).
Every time I go, I must add extra noodles; after all, I've waited an hour, so I might as well eat a bit more. I'm curious that adding half a serving of noodles and a full serving only differs by ten dollars, so of course, it’s more cost-effective to add a full serving.
Next, I think the special red sauce is the essence of the dish. Even as someone who doesn’t eat much spicy food, I always choose the 1/2 spicy option, and honestly, it’s not that spicy at all.
Lastly, I still order their white rice, which is really delicious. I eat a little bit first, then pour the rice into the soup to finish it off, ending on a perfect note.
Additionally, the waiting time is actually about half an hour shorter than the system's estimated time, so you can pick tickets at both branches to see which one gets to you faster! (And I usually give the number from the other branch to someone who just arrived to queue 🤣)

Every once in a while, I want to eat Yilan, and I have mastered the rhythm of eating Yilan! On weekdays, you can get in after a short queue at around 5 pm, and our restaurant is usually less crowded than other restaurants.
