This time I visited "Mian Jia Yu Wei" on Ximen Road in Tainan again. I actually liked this place quite a bit in the past. Compared to some heavily salty and oily Japanese ramen, the broth here, while flavorful, is overall more refreshing and not greasy. After eating, you won’t feel that burden of being overly full and oily, which I really appreciate.

The soy sauce ramen has a very clean broth that’s salty and aromatic but not overly salty, with a distinct layered flavor; whereas the pork and chicken ramen has a richer broth, with a strong aroma, the kind that makes you feel "ah~ it's flavorful" after just one sip. The two types of broth have different styles, but each has its highlights.

As for the chashu, I found it a bit on the lean side, which made the texture a little drier, lacking that melting, oily smoothness when you bite into it, but the flavor was well-seasoned overall, so it was still acceptable. What surprised me more was their chicken—it was really delicious, perfectly tender, neither dry nor flavorless. I guess it might have been sous-vide cooked; although I’m not sure, you can definitely tell that care was taken in its preparation.

The service was also a plus; the staff were quite friendly and didn’t make you feel pressured, and the overall atmosphere of the restaurant is comfortable. Whether you come alone for a quick bowl of ramen or with friends to enjoy it slowly, it’s quite suitable.

In summary, "Mian Jia Yu Wei" still maintains the tasty standard I remember. If you enjoy ramen with distinct flavors that isn’t greasy, you can definitely order a bowl here with peace of mind.
