Although you can see Chongqing noodles in many places now.
But if you want to trace the historical trend of this Sichuan-style noodles, you may have to go back to Liaoning Street ten years ago.
That is Lanfang Noodle Restaurant, which was established in Liaoning Street Night Market in 2015.

What we enjoyed this time was of course their signature Lan Fong pepper noodles.
I also ordered a bowl of Lanfang tofu soup, which totaled 150 yuan.

Lanfang Sichuan Pepper Noodles: Although the whole bowl looks bright red, the spiciness is actually not very high. According to the spiciness adjustment suggested by the store clerk, even people who are afraid of spicy food can feel the aroma of Sichuan peppercorns with confidence.
The dough is very elastic. In addition to catching a lot of sesame seasoning, it also goes well with the soup.
As expected of the store's signature dish, the flavor is truly outstanding.

Lanfang Tofu Soup: It should be a soup stewed with radish essence. With this as the base, a whole tofu is boldly placed in the middle.
Whether you cut it with chopsticks or scoop it out directly with a spoon, you can thoroughly feel the tenderness of the tofu.
The store recommends dipping the tofu into the famous Dongquan chili sauce to enjoy the aroma of the tofu and the spicy and sweet taste of Dongquan chili sauce.

Sixi Baked Gluten: I didn’t order it this time, it’s sold out 😭
I had to order it every time I visited before. It is a very authentic Shanghainese dish.
The roasted bran is paired with Sixi (shiitake mushrooms, fresh bamboo shoots, fungus, daylilies). The roasted bran absorbs the soup, and the Sixi embellishes the texture. It is really a delicious Kung Fu dish.

In addition to the signature Sichuan pepper oil, the store's sauce bar also provides Dongquan chili sauce for tofu soup.
If you think it's not spicy enough, you can also sprinkle ghost pepper powder on it. Ghost pepper powder is really spicy and you can feel the obvious flavor change when you sprinkle it on the tofu soup.

Overall, I would call Lanfang’s Chongqing noodles the strongest.
Unless you are allergic to spicy food to the point where your life is in danger, you must definitely visit and eat there once. I recommend it to everyone!
