First of all, the floor in Changjiao Noodle Shop is very clean, equipped with air-conditioning and fans, and the dining environment is quite good. It has changed the public's old impression of traditional noodle shops.
Keelung dry noodles have their own uniqueness: a trace amount of edible alkali is added to the noodle body to create a chewy texture, but unlike Tainan pasta, there is no need to add eggs. Food writer Ye Yilan even wrote an article praising: "Keelung, a paradise for face control"!
This time I went to order the flat noodle soup, which was a mistake. The noodles tasted a little too soft. On the other hand, almost all the customers at other tables ordered dry noodles with the flat noodle soup, which was the correct way.
In addition, the long-legged noodles, pig's feet, and tofu are all strong points. Each piece of flat food is wrapped firmly without falling apart, and tastes great. The pork knuckles and legs are soft and tender, and the sauce goes well with it. The outer shell of the fried tofu is just right, without looking too old, the inside of the tofu is soft and thick, and the overall taste is perfect. It is definitely the first prize in the fried tofu world.
Long Leg Noodles was suspended for four months starting from the end of November 2023. After reopening, it was originally open until 10 pm and closed at 3 pm. It was only closed on Sundays and Thursday. The store has been in business for 60 years and the second generation owner prays that after more vacations, the business can last longer.
