The bar offers creative cocktails, such as ham over and tropical penicillin, with unique flavors that make you feel like you're tasting a dish.
The bar has a great lighting atmosphere, and the transparent kitchen along with the open cocktail counter adds interactivity, allowing people to experience a unique dining experience.
The service staff is friendly and attentive, and reservations should be made two days in advance to ensure the desired time.
This bar has been on my shortlist for quite some time. I had tried to go before, but if you make a reservation the day before, often only the later times are available! It's better to book at least two days in advance to get the time you really want. On this day, I happened to catch the last reservation slot with a friend.
Once inside the bar, you can immediately feel the great ambiance created by the lighting! They have a transparent kitchen and an open cocktail preparation area, so you can see the bartender mixing your drink right in front of you. You can also see the chef in the back preparing the dishes you ordered!
Today, we ordered more than two cocktails, but since this one is quite special, I wanted to highlight it.
❤️Ham Over
The Chinese translation actually means "Give me that slice of ham." It tastes a bit like a Spanish-style cold soup, and the description also mentions that it has a strong food flavor. You can clearly taste the unique blend of tequila and bitter melon, along with the combination of sweet peppers and ham, making it feel like you're enjoying a dish!
❤️Tropical Penicillin
The Chinese translation is "Tropical Painkiller!" I was a bit worried about the black ants inside when I ordered, but fortunately, the black ants were not in the cocktail glass; they were in a jelly served on the side, and they didn't have any strange taste at all! Instead, the flavor of the cocktail was fantastic; you could distinctly taste the aroma of caramel!
This is a bar I highly recommend recently. The drink menu is extensive. Although I didn’t order food, I saw someone next to me particularly come for drinks and noodles, so I believe it's also quite good!
Let me introduce to you another Bar hidden in the basement-
unDer Lab
This time I came on a Sunday, so I tasted their seasonal Set menu.
What is provided on weekdays is the Daily menu.
You can see the menu on their IG.
The Set menu has a total of five cocktails, one non-alcoholic,
Paired with six dishes.
The overall story is inspired by the origin of mankind and the process of discovering new things.
❣️The first few dishes are introduced in more detail. I really drank a lot later, so I will write less. Please forgive me❣️
The first aperitif was Spanish organic white wine (Sherry barrel),
The front is fruity, and the back is fermented bread.
It has a sweet and honeyy taste in the mouth, and it will not disturb the taste buds at all in the first glass.
Also very friendly to non-drinkers.
The first meal to go with - Nest
I imagined humans living in caves and fighting against birds,
Protein cakes are made using the plant from Taichung - barley.
It tastes like matcha, and the meringue is not overly sweet either.
Paired with salted egg yolk and orange mayonnaise,
Combined with biscuits, it creates different levels, which is very novel.
Then!
There were crickets inside, and I was completely unprepared.
Being scared 🙂
Bartender said it mirrors human cave dwelling, and so do crickets.
So it is used to imitate humans,
It has a mushroom flavor, it tastes crunchy and has no weird taste.
But I’m so broken inside 🤣
First cocktail - fire
From the first time humans discovered fire,
Just like figs were the first plants cultivated by humans.
This concoction has two magical flavors:
It smells like pickled plums at first, which is very appetizing.
Enjoy with the fig ham on the front.
Next is the flavor switch in the second paragraph,
Corduroy was served on the table, with ham and figs on it,
The whole thing is like a campfire barbecue,
The burning of the lighted corduroy gave the burning aroma of ham,
If so, just pour in the mulberry bubbles.
The whole body transforms into a berry tone, and the dense bubbles touch the mouth like fire.
Simulate the feeling of fire burning your body.
The overall experience is very strong!
The next step is fermentation
It was human beings who first understood that sweetness and fruit naturally fell,
The process of fermentation.
It feels like kaiseki cuisine.
Start with scallops and cantaloupe
Then drink cantaloupe sake martini,
It's like a dessert, very fresh and sweet, with a hint of seafood.
In the middle are white wasabi and chestnut puree, which give it a fermented taste.
A little wasabi flavor offsets the sweetness of chestnuts.
Finally, the mackerel sushi has a very solid texture.
Mocktail is kombucha, a combination of brown rice tea and amazake.
It tastes like rice cake, probably because of the genmaicha.
Next, it’s paired with Dali’s paintings - Eternal Traces of Memory
Air-drying became widespread due to trade,
Cocktails include feta cheese, olives, onions,
It tastes like vegetable soup.
There is a piece of jelly next to it, which is Bloody marry, tomato and celery.
There are also 3 ants 🐜 added on top.
(Fortunately, I was already fainted by then and could eat it😂
The time painted on the scones corresponds to 11 o'clock right now!
The roast duck has a rich flavor, but the wrapper has a thicker crust.
It overwhelms the flavor of the combination a bit,
I personally prefer each flavor when eaten separately.
Finally, there is Oh's favorite cocktail - Blackened.
For example, the fermentation process of black garlic requires bacteria and temperature to turn black.
The wine is paired with sour and sweet tea, and the blackening also requires heat.
So the cocktail is hot and the base is tequila,
I like that it doesn’t taste like alcohol at all,
It’s a delicious tea.
But after adding black garlic sauce, the wine will become thicker.
There is salt on the side, so you need to add salt to neutralize it.
But I still like the original flavor without adding anything.
last dessert
It's chestnut and sweet potato ice cream with fish roe.
The wine is a combination of croissant and whiskey.
I don’t drink whiskey myself, so I can’t comment 😂
But the ice cream is the best
I didn't expect such a strange combination to be so perfect.
Sweet and salty with fish roe,
Like sea salt ice cream, but you can feel the popping fish eggs.
After the overall experience, I just feel that the menu creator is too genius.
Directly look forward to next season’s Set menu,
I hope there won’t be any more Chong Chong dishes🥲
The atmosphere is also great, suitable for dates😍
