👍👉Sicilian Fish Taco $350
This was the first one on the board that day

I've never had anything like fish tacos before
Kind of like meatloaf
But it is made using the taste of fish meat

The octopus appeared so alive and bloody!

剛開幕等時候吃過一次,之後就變得超難預約,隔了一年才二次來訪。 生胭脂蝦/生鮪魚粉紅青醬雙槽麵 這道是友人點的,最近不少餐廳有做類似的生胭脂蝦義大利麵料理,我個人不喜歡這樣的搭配,冷冷的生蝦放在剛炒好熱騰騰的義大利麵上,冷熱攪在一起,最後變成很奇怪的溫度。 味道上面是還可以,粉紅青醬並不是粉紅醬加上青醬,而是源自西西里島的Pesto alla Trapanese 特拉帕尼青醬,除了青醬原有的羅勒外,還加上了杏仁和番茄,杏仁香氣十足,還有大量杏仁碎增添口感.多到有點喧賓奪主。 櫛瓜花 第一次看到櫛瓜花,熱愛櫛瓜的我當然要點來試試看,後來查了一下食譜,櫛瓜花多數好像都是用炸的方式來料理,櫛瓜花有分公花和母花,公花只有花,母花下面帶有小櫛瓜。櫛瓜花內塞入莫札瑞拉起司,增添鹹香風味,非常開胃。 香煎章魚甜椒醬 前一天才在Smith & Wollensky吃到Romesco sauce,黑馬小廚的Romesco sauce大勝,微微的辛辣味和章魚的焦香好搭,但這天章魚的熟度沒有很好,有幾塊偏硬了。 牛舌綠醬汁 這道是黑馬小廚的招牌菜,特地翻出上次的照片,發現做法不一樣了。一年前吃到的是切成薄片的牛舌,現在改為厚切的方式,口感更上一層樓,但如果外層能烤的更酥會更好。綠醬汁是店家調製的青醬,再加上橄欖油,味道層次很豐富。 伊比利火腿捲 這道沒有很喜歡,最底下是茄子,中間是伊比利火腿,最上面再鋪上起司去焗烤,整體味道很鹹,也偏油膩。 這次整體吃下來並沒有太驚豔,加上不好訂位,會減少再訪的動力。

不知道大家是否聽說過這家餐廳?這家餐廳在我的口袋名單中已經存在了好幾年, 看到這家餐廳每年從沒跳出亞洲最好餐廳的前50 甚至幾乎都是在前10名的排列當中… 也曾經是亞洲第一名的餐廳! 更別說是摘下米其林的星星🌟頭銜~ 讓我忍不住一定要去嘗試看看! ㄧ到門口就被店員熱情的招待, 他們會先準備水,讓你在旁邊等候一下.. 基本上大家都是趁機在四處拍照, 但時間快到的時候會有服務人員一組一組的帶進去座位~ 一進去餐廳🍴的時候,其實我有被冷氣的強度給驚嚇到… 其實我完全沒有告訴服務員我覺得太冷, 但是他們觀察非常敏銳,直接拿了披巾進來給我, 而且讓我知道,如果太冷的話,他們還會為我調整空調在這個服務上面,已經讓我一開始的好感度增加! 時間快到的時候,餐廳內部會開始調整燈光和音樂🎵並且開始有一個專業廚師為大家介紹! 吃過這麼多的fine dining第一次遇到餐點不僅配合了各種酒類,甚至還配合了燈光🎆和音樂! 而且這裡的餐點完全體現了什麼叫做創意加上藝術.. 我隨機的在這邊介紹讓我印象深刻的菜色 其實全部的餐點,最後都有告訴我們正確的名稱是什麼,但是為了讓大家能夠找到照片上面的菜色,我就用形容的方式來解釋一下… ❤️ 紅色葉子甜點 會對這份點心特別有印象..是因為一般很少在菜與菜得中間突然來一份甜點,大部分所有的餐都會是在最後的時候才上甜點🍮但是他們卻在這中間做了一個很清爽的甜點清新了大家的味蕾,中間他們用了紫蘇這種清新口氣的葉子,搭配了香味很濃郁的芝麻,營造出一種清新香甜的味道,特別的地方是他們竟然夾雜了花枝🦑在裡頭,所以在口感上面突然多了一種QQ彈彈的感覺,實在非常佩服廚師的創意! ❤️銀光沙爹 桂竹筍做成沙爹的形式..有著沙爹醬料,當我以為其實就是一道雞肉料理的時候,一口下去卻發現是蔬菜清脆的口感,加上竹筍原本就有的甜味,呈現了一種鹹甜交雜的口感!非常好吃! 水餃 大家看到水餃🥟的時候,應該也就會以為不過是一道普通的豬肉水餃,頂多只是把皮換成了其他的顏色,沒有想到一口下去的時候,因為搭配了底部的醬料,卻發現熱熱的醬卻在裏面加了一點香檳🍾️沒想到這一點點香檳的味道,就讓整個水餃口味都不一樣了! 茄子 在這道餐點出現以前,服務的廚師會跟大家互動,他們會請你說出自己的名字跟最喜歡的蔬菜,然後才開始介紹接下來要出現的餐點,我很剛好就說出我最喜歡的蔬菜🥬是茄子!當他介紹的時候,我確實也很開心,茄子上來時其實是色彩繽紛的,他們用 芝麻、白蘿蔔和茄子🍆的皮,去做出不同的色彩,代表了不同的味道,我真的很佩服廚師能夠想像到這些味道的結合,而且還能夠結合的這麼可口! 黑丸 這是全部裡面,我最喜歡的一道!大家以為小小的一顆黑色丸子能夠有什麼特別,但是丸子裡頭包含了松子、雞肉和米飯🍚松子的香氣讓整個其實很像是一口炒飯的感覺完全提升成很高級的體驗,黑丸的外皮是酥脆的,有一點點像是鍋巴的形式,要怎麼形容這一個餐點..可能真的要親自體驗過後才是最真實的! 總體來說,我是超級推薦~這是我第一次體驗到餐點,可以結合音樂和燈光,再搭配上每一種不同的酒!甚至可以跟每位廚師近距離的接觸,深深地感受到他們做每一道菜的用心,而且從來沒有過吃飯的時候還可以一起玩遊戲,一起分享喜好,甚至大家一起唱歌一起拍桌子!著實是一個非常棒的經驗~

RAW-the last dance!我從新加坡追到了台灣… 在RAW即將閉幕成為廚藝教學前 終於品嚐到米其林二星這一道道令人讚不絕口的料理! 不得不讚嘆廚師的用心和創意 ❤️光是一道開胃菜to the sea and to the land 用生蠔🦪的外殼當裝飾,吃的時候以為是生蠔但其實是冰淇淋,還有稍微烤過的棉花糖,鹹甜的口感搭配上榛果的香氣,真的非常特別! 甚至幸運遇到了香港名廚#vickycheng 把一道簡單的開胃菜帶入了🦐 潮州風味!微辣卻帶著清香~一口就能滿足味蕾! 驚艷的不只如此… ❤️Beginnings 只用了兩種食材..蛋和馬鈴薯🥔!雖然各種蛋的料理吃過..但是把馬鈴薯做成這樣到餐點倒是第一次~結合各種蛋類食材..讓馬鈴薯原本的甜味結合蛋的香味..每一口都是不同的感受! ❤️鯧魚🐟料理~這道用了很十足的陳皮,而且磨的非常絲滑後加入黑豆醬,再將鯧魚清蒸後以最新鮮的方式呈現!這種用多種食材結合之後卻能夠讓味道在口中如此和諧,又能久久不會散去的味道,這種細緻度著實很讓人驚艷… ❤️麻婆豆腐 雖然麻婆豆腐在台灣是非常常見的一道菜,但是廚師的發餉卻是非常可愛的,麻婆豆腐裡面還添加了蚵仔,讓原本只有🌶️麻婆豆腐的麻加上了海鮮的鮮,突然就讓平平無奇的一道麻婆豆腐,多添加了一種滋味! 前後總共17道料理!吃完就明白為什麼10年來能夠天天滿座..成為台灣最難訂餐廳!很可惜的是,這家餐廳即將成為歷史,以後就會變成學院,希望能夠知道出更多優秀的廚師,讓我們能繼續享受到這一種特別的體驗!
