When you come to Tainan, having beef soup is almost a must, and Wen Chang Beef Soup is one of the well-known restaurants familiar to both tourists and locals. There is usually a crowd during meal times, but the service is relatively quick, and the turnover rate is high, so even if you have to wait in line for a bit, it won't take too long. The atmosphere inside the restaurant is typical of a Tainan beef soup establishment: simple and lively, with everyone there for a bowl of freshly made beef soup.

This time, I ordered the basic beef soup and also a plate of sautéed greens. When the beef soup was served, I could see pink slices of fresh beef laid out in the bowl, which were then drenched in hot broth, causing the beef to change color instantly, releasing a wonderful aroma. The broth is sweet and carries the natural fragrance of beef bones, without excessive seasoning, making it very smooth to drink. The beef slices are not particularly thin, but they are still tender, with a bit of chewiness and no toughness, allowing you to taste the unique freshness of the fresh beef.

The sautéed greens were simply stir-fried with garlic, cooked just right, and they had a crisp texture with the perfect amount of saltiness, making them a suitable accompaniment to the beef soup. Although they are just a side dish, they help balance the flavors and prevent the meal from feeling too heavy with meat.

What makes Wen Chang Beef Soup impressive is its consistency; no matter how many times you visit, the taste remains at nearly the same level. There may not be many variations, but the simple combination of freshly sliced beef paired with hot soup is charming in itself. For those visiting Tainan for the first time, it's a classic must-try, and for those who have already been many times, you'll still want to come back for another bowl.
