Located inside the Kangle Market, next to Rongsheng Dim Sum, A-Cai Dim Sum has been serving traditional sausages and cooked meats for over 60 years. It’s somewhat akin to the "black and white cut" concept, and the store environment within the market is bright and clean.
Looking at the shop name, it seems to have been inspired by the old afternoon tea tradition, where one would enjoy offal seafood with a beer. The sauce has a sweet taste typical of Tainan, complemented by wasabi, which pairs very well. Next time, I’d like to try the less common pig lung.
