Located inside the Kangle Market, next to Rongsheng Dim Sum, A-Cai Dim Sum has been serving traditional sausages and cooked meats for over 60 years. It’s somewhat akin to the "black and white cut" concept, and the store environment within the market is bright and clean.

Looking at the shop name, it seems to have been inspired by the old afternoon tea tradition, where one would enjoy offal seafood with a beer. The sauce has a sweet taste typical of Tainan, complemented by wasabi, which pairs very well. Next time, I’d like to try the less common pig lung.

When eating this kind of dim sum/cut black and white, I think the sauce is the best
Tainan almost always has soy sauce + mustard sauce, which is quite appetizing.
The raw intestine tastes clean and has a soft and crisp texture.
The flower branches taste relatively ordinary, while the cabbage heads are juicy and delicious.

Both large intestine and vermicelli are quite satisfactory and have a chewy texture.
