In Kaohsiung? Did you know that the Kaohsiung Tourism Bureau is hosting the "2024 Kaohsiung Hot Pot Noodle Grand Prize" from the end of 2023 to the beginning of 2024? The goal is to elevate hot pot noodles to have the same international appeal as Japanese ramen. In this event, evaluations will be based on criteria such as "broth, noodles, appearance, creativity (ingredients), and hygiene," with on-site assessments being conducted. The shop I’m introducing today was selected as the best popularity winner in this event, featuring hot pot noodles made without hot pot ingredients, with the broth being brewed from a large amount of vegetables and pork bones...

✅ Stir-fried Laksa Hot Pot: The broth is handmade by the owner, with various ingredients stir-fried in shrimp oil, then mixed with coconut milk to create a rich and smooth base. The broth has a faint milky aroma and a slightly spicy flavor; although light, it is very balanced and not overly salty. The ingredients in the pot include fresh shrimp, sliced pork, clams, baby corn, and vegetables, all of which are very fresh and delicious. It is paired with thick noodles that absorb the broth, giving a very chewy texture. (In the picture, there is also an additional purchase of meat for 30 NT$ and an egg for 15 NT$.)

✅ Grandpa's Sour Cabbage Hot Pot: The ingredients are the same as the Stir-fried Laksa Hot Pot. However, this broth has a large amount of sour cabbage added. Nevertheless, the acidity of the sour cabbage is mild, adding a hint of sourness to the broth, giving it an extra layer of flavor. This dish is paired with regular thin noodles, which also have a certain chewy texture.

✅ Hokkaido Milk Crust Thick Slice: Paired with the owner’s homemade milk crust sauce, it is creamy and not greasy, with moderate sweetness. The thick slice of bread is soft in texture, resembling fresh toast.

✅ Kaya Toast: The soft fresh toast is spread with homemade kaya sauce and served with butter cubes, creating a rich flavor with a blend of salty and sweet.

✅ Indian Curry Milk Crust: The first bite reveals a hint of curry spiciness, but the flavor is not overpowering; the highlight is the crisp texture of the milk crust after baking, adding a layer of flavor to the toast. It’s very special!

✅ Qian Dao Red Tea Milk: The taste is simple, with the red tea milk being warm and smooth, providing a strong milky aroma that pairs well with the tea fragrance.

Qian Dao’s dishes are focused on not adding MSG or seasoning powders, and for heavy-flavored food lovers, they can choose to add the shop’s provided satay sauce, chili sauce, and MSG on their own. The broth we sampled was not too strong, mainly enhancing a bit of flavor from the vegetable-based stock, which still allows the natural sweetness of the pork bone broth to shine through. The milk crust element emphasizes texture, with each flavor only lightly emitted, ensuring that you won’t feel overwhelmed after eating. This shop enjoys great popularity in the Hot Pot Noodle Grand Prize, with its noodles not having an oily taste, making them very delicious!
