The boss kindly introduced the differences between Taitung scallion pancakes and those from other places, mentioning that there are many flavors available. This time, we chose the flavor with old fried dough sticks and egg.
The scallion pancake itself is a bit heavy on flavor and oil. It tastes pretty good, but it would be even better if it could be lighter and fresher. The pancake skin is relatively thin, and if it were a bit thicker, the flavor might be more balanced. However, the boss mentioned that it is modeled after the famous Huang's scallion pancakes from the seaside in Taitung, which also tends to be on the heavier side in terms of flavor and oil, and still attracts long queues, so this may just be a matter of personal taste.
