The cold noodles in Chiayi are really special. After trying them once, I felt they were great and wanted to try other places. I did some online research and decided to go to Huang Ji Cold Noodles and Liang Yuan.

When I went there, it was already past one in the afternoon, but there were still quite a few people. First, I queued to order. In addition to cold noodles, they also have Liang Yuan (a type of cold dessert). They have summer-exclusive ice products, and each person has a minimum order of one serving of cold noodles, Liang Yuan, or century egg tofu. There aren’t many seats inside, so after waiting a bit, we were finally seated. The staff helped arrange the seating, so we didn’t have to find a spot ourselves. Once seated, the meal would be ready, and we needed to call out our table number to pick it up. If you want extra chili, you can add it yourself when you collect your dish.

I ordered one serving of cold noodles. The garlic flavor was quite prominent; if you’re afraid of garlic, you can let them know when you order. I really like garlic, and it seems like they added less mayonnaise? It tasted very refreshing, and there were some vegetables paired with it. After finishing one plate, I didn’t feel particularly greasy.

The Liang Yuan was super special; I don’t think I've ever had cold meat balls before. I was initially skeptical about ordering it, but it was more reasonable than I expected. The skin was quite chewy, and the filling's flavor was harmonious.

For the side dishes, I ordered a soft-boiled egg and shiitake mushrooms in sauce, both of which were cold dishes. I thought the soft-boiled egg had a nice level of doneness, but the flavor was quite light, while the shiitake mushrooms were also on the refreshing side. They also had tea available for dining in, which you could help yourself to.

Overall, the meal was quite refreshing; if you enjoy light flavors, it's worth trying.
