Located near Panshi High School, Beimen Shishi is a small noodle shop that specializes in simple, homestyle flavors. This time, I ordered two noodle dishes that showcased two completely different routes from the shop. The "Old Shanghai Scallion Oil Noodles" had a subtle fragrance of scallions when served. The noodles were slightly firm with a good chew, perfect for those who enjoy a more substantial texture. The sauce had a sweeter taste, which made it feel fresher and milder compared to the typical salty and aromatic scallion oil noodles. This seasoning is suitable for diners who don’t enjoy overly salty or greasy food, but for those accustomed to the traditional salty flavor of Shanghai scallion noodles, it might feel a bit lacking in impact. Overall, the dish is simple and comforting, reminiscent of "home-cooked noodles."

The other dish, "Miso Salmon Egg Drop Noodles," took on a warm and soothing soup noodle approach. The broth blended the mild saltiness and richness of miso, offering a gentle flavor without overwhelming fermentation notes, making it smooth and non-irritating upon tasting.
