Ordering
As soon as you enter, you can see a crowd lining up. Taichung Goose Meat is made to order and freshly cut. After weighing, the price is communicated, and the counter staff will ask if you prefer goose legs or goose breasts. If you’re unsure how to order, you can ask the owner for recommendations. The service is friendly and warm. The open kitchen allows you to see the owner skillfully butcher the meat while wearing a gold ring. The clean white cloths are stacked high like little mountains, and after each goose is chopped, the cutting board is wiped immediately, showing great attention to cleanliness.
Inside the restaurant
After entering, the grandmother will arrange your seating and give you a number to queue for ordering. The kitchen and dining areas are separated, so there is no greasy smoke; however, due to food delivery, the floor might be a bit oily. The dining area is air-conditioned, with most seating being four-person tables, eliminating the issue of needing large round tables typical in traditional goose meat shops. There’s a self-serve sauce station with spicy bean paste, garlic paste, and soy sauce paste. For southern flavor, you must pair with soy sauce paste and garlic paste, which adds more depth to the taste.
Taichung Goose Meat in Tainan doesn’t have a price list or menu; the wall only lists their offerings: goose meat, white rice, vermicelli, bamboo shoot soup, rice blood cake, goose intestines, offal, occasionally available drunken goose, and popular dishes like goose intestines and various offals, such as goose hearts and gizzards.

Their rice blood cake is truly recommended.
Goose meat platter: $270
Unsure of how much we could finish, we asked the owner for assistance, who also inquired if we wanted legs. Goose legs are juicier and more tender than goose breast. The goose meat at Taichung Goose Meat is savory, juicy, tender, and not greasy, with a generous bed of bean sprouts and chives as the perfect accompaniments. It makes you want to have a beer! There are few small bones in the goose meat, making it easy to eat.
