To begin with, the conclusion: the ramen is on the salty side, with an average performance. There are too many delicious ramen spots in the Taipei area, so I won't be visiting again.
"Yuchi Ramen" is located near Lin Sen North Road, about a 10-minute walk from Exit 2 of Zhongshan Station. The store is small, with only counter seating and a few regular tables.
I arrived around 5:30 PM on a weekend, and there was no need to line up for a seat. Around 6 PM, I noticed people starting to queue outside, but there were only about 1 or 2 groups, and it didn't seem like a place where you would have to wait long for ramen.
Perhaps due to taking delivery orders, even though there weren't many customers inside, I had to wait about 15 minutes after placing my order before the food arrived, which was a bit frustrating.
A plus side is that you can pay directly with Linepay online, which is quite convenient.
Chicken and Pork Soy Sauce Ramen - $330
The broth is quite rich and initially tastes good, but after a few sips, it becomes overwhelmingly salty, leaving me thirsty. Naturally, I couldn't drink to the bottom of the bowl.
Although the price for this bowl of ramen is on the higher side, the portion of noodles and ingredients is quite generous. Besides the four slices of chashu, there is a lot of spinach, a piece of seaweed, a soft-boiled egg, and a quail egg.
The eggs were all quite tasty, and I was particularly surprised to see a quail egg in the ramen, as it's not very common.
I originally thought there would be both chicken and pork chashu, but later realized it was all pork. The chashu is on the fatty side, and by the end, it felt a bit overwhelming.
Overall, this bowl of ramen is too heavily flavored for my taste, and personally, I found it hard to eat. I started to feel full and a bit sick around two-thirds of the way through the bowl. This isn't a ramen shop I'd want to revisit.

It was my first time to eat Kyushu style tonkotsu ramen. The soup is cooked with a large amount of local fresh ingredients such as pork bones and chicken bones, and the noodles are made from Japan's famous Mikawaya noodles. There is wifi in the store, which mainly has bar seats, and you can order by scanning the QR code. The sauce section includes seven-spice powder, red vinegar and pepper. This time I ordered a rich Japanese-flavored soup. Personally I think It doesn't taste very salty or greasy, and you can drink the whole bowl. The ingredients include seaweed, chopped green onion, red ginger, and fungus. The sweet and pungent feeling of red ginger can change the taste and relieve tiredness. The fungus is very crispy. The soft-boiled eggs have a smooth texture and a slightly soy sauce flavor that is delicious. The barbecued pork is a thin slice with a slight roasting aroma. It is mainly lean meat and has a more obvious texture of shredded meat, but the memory is not particularly deep. For the noodles, I chose thin noodles, and this time I chose hard noodles, but in fact it tastes not as hard as expected, and has more of a normal texture.
The overall feeling is that it is a bowl of ramen that is comfortable to eat, but there are few that are really impressive or that would make you want to return. If you want to try soaked ramen, you might as well give it a try.
