It is said that the owner studied traditional pasta-making methods in Italy. Despite the many types of noodles available in the restaurant, they are all handmade by him.
The noodle varieties include the common Taiwanese straight noodles, flat noodles, penne, and squid ink noodles; there are also others like bellflower noodles and fried twisted noodles, among others. In terms of texture, the noodles are long and chewy, which confirms that they are indeed handmade.
