As a lover of pasta and sauerkraut, of course I cannot miss the famous "Sister Ping's sauerkraut noodles". It has been on my to-eat list for a while. It is said to be the memory of Lao Wanhua people, and I finally have the opportunity to check it out!
"Ping Jie Pickled Cabbage Noodles" is located near Ximen Station and Beimen Station. It takes about 13 minutes to walk from these two stations. We arrived at noon on Saturday and the business is super good.
Queuing method:
Go directly into the store to fill in the menu and number plate, hand it to the clerk after filling it out, and then wait outside the store for your number to be called
p.s. The store clerk kindly informed me that although the store is scheduled to close at 2 p.m., in fact, as long as customers come in before 2 p.m. to fill in their orders, they will still be able to eat.
I originally wanted to have dinner at 12:45, but I saw a lot of people queuing outside. The clerk said that I would have to wait for another 20 minutes because I had something to deal with at 1 o'clock. I wanted to come back later before closing, and there should be fewer people. , but when I came at 1:45, there were more people lining up than just now 😂
I waited about 15 minutes to be seated, and then another 15 minutes to get my meal, but I was willing to wait for the food!
Only one person came to dine today, so I only ordered dry pickled cabbage noodles (medium) $65 + a la carte poached eggs $15
Both dry noodles and soup noodles are available in three sizes: large, medium and small. I was not sure about the portion size when I first came here, so I ordered a medium bowl which should be safe. It turned out to be a big portion. Fortunately, I have a pretty big appetite. If I eat it normally, Girls or those who want other side dishes should just eat a small bowl~
(When I saw the large bowls ordered by other customers, I was really frightened to death by the portion size...)
I saw other people on the Internet adding a poached egg to their meal, so I followed suit. I saw the half-boiled egg liquid flow out and mix it with the dry noodles, making it taste smoother~
After mixing the half-boiled eggs, sauerkraut and the sauce hidden under the noodles, it looks super delicious. You can smell a faint aroma of oil. It also tastes light soy sauce, and the sauerkraut flavor is not too overwhelming.

Please be sure to add a few tablespoons of garlic paste and hot sauce! The taste level is further improved, and the saltiness is brought out more. I think the deliciousness is much enhanced!
Overall, the pickled cabbage dry noodles are very suitable to my taste. It is a store I will definitely visit again. The price is also super cheap. It doesn’t cost more than $100 and I feel very full~
This time I found that many customers ordered soup noodles, and they sell my favorite wontons here. Next time I want to try pickled cabbage and egg wonton noodles.
ps The staff at this store are very friendly and pet-friendly! One group of customers brought a big dog to dinner, and they could land directly. The clerk even chatted with the customers enthusiastically and asked about the dog’s name and age. It’s such a humane restaurant.

After the proprietress closed down her business for a few months due to a car accident, she moved and changed the name to Sister Ping’s Sauerkraut Noodles to this day.

The noodles of pickled cabbage and egg noodle soup are flat but elastic ramen noodles. After being topped with refreshing soup, a large amount of old pickled cabbage is used to enhance the flavor.
The taste of sauerkraut is very rich. When paired with noodles or soup, every bite is full of the unique salty and sour aroma of old sauerkraut.
The soft-boiled egg is a complete skill, and the just right liquid yolk brings us a delicious feast.
Dried tofu is very ordinary so I won’t say much.
I must order kelp every time. The elasticity of the thick kelp roots in the mouth is definitely worth a try. This is a feature that kelp silk and kelp knots do not have.
The large cup of fresh minced garlic and the chili on the side in the sauce bar are also worth trying. The big letters behind the chili say "spicy" but they are genuine.
When the store was still in the alley of Hankou Street, the boss kept some birds in front of the store, and there were also little shop rabbits inside the store.
It's a pity that they are no longer there after moving to the new store.
Only this old taste that has been in Ximen for more than 60 years is still alive.
