I passed by a night market and saw this place called "Fresh Boneless Duck Meat," and there were quite a few people, so I thought I’d give it a try. I ordered a bowl of duck meat soup noodles. The taste was decent, but nothing particularly impressive.
The broth of the soup noodles was a bit thick, leaning towards the sweeter flavor typical of Tainan. However, the salty flavor slightly balanced it out, so overall it wasn’t too greasy. The duck meat was in thin slices and boneless, which is a plus because it’s easier to eat. However, the portion wasn’t large, and it was gone in just a few bites, which left me feeling a bit empty.
The noodles had a decent texture; they weren’t mushy, but they also weren't particularly chewy, just the standard level you would find at night market soup noodles. Adding some spice to the broth would have been better, as the sweetness was quite prominent. A bit of chili could help balance it out. However, it seemed like the restaurant didn’t offer any (or only had that kind of sauce that was salty but not spicy?). In any case, I ended up using pepper instead.
Overall, the taste was okay, not terrible, but it didn’t make me want to return specifically.
