Walking into "He Ping Turkey Rice" in the East District of Chiayi, the appearance is simple and the店面 is not large, but it hides the busy flavors of the common people, with lines forming daily. The crowd in the store is always present, whether on weekdays or holidays, and you'll often find customers either buying takeout or waiting in line for dine-in. However, the dine-in seating is cramped, and one must endure some heat and congestion.

The restaurant's biggest signature dish is the turkey that is sliced on-site. Every day, the turkey is freshly ordered and cut, preserving its sweet and juicy skin and meat. Compared to other chicken rice restaurants in Chiayi, it does not add fried shallots for flavoring, relying only on turkey fat and sauce to naturally enhance the meat's aroma, making it refreshing and pure in flavor. The turkey rice is made with finely shredded turkey, mixed with chicken fat and sauce, resulting in a smooth texture while still retaining a sweet and slightly salty fragrance; the rice is distinct yet moist.

As for the side dishes, I tried the braised bok choy and braised tofu, both well-seasoned and tender, reminiscent of the nostalgic taste from my childhood.
