The soup base is a concentrated fish broth made from tai fish from Uwajima, Ehime Prefecture
A rich sesame sauce whipped to a frothy, delicate texture
Accompanied by some minced pork,
it adds a unique tasting experience.
The chashu is cooked sous-vide,
and special flower noodles are used to enhance the chewiness.
It has a rich taste without being overly salty.
🍚 Tai Rice [Rice]
Cooked with tai fish broth,
the texture is soft and becomes more aromatic the more you chew.
You can drizzle ramen soup on it to enhance the flavor.
🍤 Shrimp Dip Noodles
As soon as the shrimp dip soup arrives, you can immediately smell the sweet shrimp flavor.
The noodles are slightly firm but have a great chewy texture and overall excellent flavor.
Though the chashu is thin, the doneness is perfect.
