This time they have once again retained their Michelin two-star rating and have moved to Neihu. I heard that they specially invited a Japanese 🇯🇵 designer to completely revamp the place. Wanting to see the new environment, I made a reservation and went to dine 🍽️.
As the time approached, I was already waiting at the door, and the staff came out promptly to greet me. Of course, the service was as great as always, and the staff's English proficiency was very high, allowing my friends to feel right at home. They were also very thoughtful in introducing today's wine list and the surroundings. After choosing wines according to our preferences, the main event of the day began.
I can only say the chef is incredibly creative! Every dish 🥘 made me exclaim in admiration. For example, there was a dish that was clearly just soy milk tofu, but they used yogurt to bring out its acidity while enhancing the aroma with pine nuts!
Another dish featured many layering techniques, using soy milk and kombu at the base, topped with fresh sea urchin to enhance flavor and sweetness, making each dish present a unique taste while remaining harmoniously balanced!
The dish that impressed me the most was the rice designed with tea leaves by the chef 👨🍳. Although it was a very ordinary rice dish, I found it touching that they put effort into merging the cultures of two countries to find common ground and then enhanced it. Plus, the taste was truly fragrant. Paired with spicy sauce and lamb, it not only removed the lamb’s gamey taste but also added a tea and Zen experience, making every bite of rice delightful!
Among all the dishes, my favorite was the eel ~ who would have thought that eel with chocolate 🍫 and Sichuan pepper could pair so well? The eel's skin was crispy, with a hint of Sichuan pepper fragrance, perfectly combined with the slightly sweet and bitter taste of chocolate. I really hope this dish remains on the menu!
Overall, I really love this restaurant. If you dine here on special occasions, it truly feels like a sense of happiness. They have really paid attention to every aspect, making it hard to point out any mistakes. I can only hope to earn more money so I can dine here more frequently!
