The broth of the pig's feet noodles is rich and full of collagen, and the pig's feet meat is very elastic with a tender texture. Although the noodles are standard, they complement the flavor of the meat well.
The shop has been in operation for over 50 years, providing a comfortable dining environment by expanding from a stall to indoor seating with air conditioning, making customers feel comfortable.
The service was not specifically mentioned, but the establishment does pay attention to the comfort of the guests, making the overall dining experience satisfactory.
Xu's Pig Trotters Vermicelli is one of the famous shops in Baoan Street, Dadaocheng's Cisheng Temple area. It has been operating for over 50 years, attracting countless local customers, and even many food enthusiasts from abroad have visited.
Today, I'm enjoying the pig trotters vermicelli, priced at 130 NTD.
Pig Trotters Vermicelli:
The broth of Xu's Pig Trotters Vermicelli is a white soup base, rich and full of collagen, which pairs wonderfully with the pig trotters in the bowl. The pig trotters have a very elastic texture; they are tender yet full of substance. The vermicelli itself is quite standard, not particularly eye-catching, but it does a great job supporting the flavor of the meat.
Of course, you can't avoid the bones in the pig trotters. Next time I visit, I might opt for the leg meat or a mixed vermicelli.
Overall, it is indeed a very delicious local queue-worthy shop. Initially, the shop had only one stall but later expanded by merging with the neighboring stall and added air-conditioned seating across the street.
It's evident that the shop not only focuses on refining traditional flavors but also cares about the comfort of its customers.
Highly recommended to everyone!

I have always liked this restaurant. I just watched a Netflix food show recently and I suddenly felt craving for food again.
Today I ordered 2 bowls of leg broth and a portion of dry noodles.
The first time I came here, I ordered the mixed dish, but I thought it was too troublesome to chew the pig's feet, so I only ordered the leg broth after that.
First of all, the shortcoming of their restaurant is that the dining environment is really not OK, but I personally can endure it for their leg broth 😂
Their pork is really good. Neither the pork nor the soup has a pig smell. It's delicious even if you eat it without the sauce!
I don't like the dry noodle sua so much, the garlic smell is super strong, but what I don't like is that their noodle sua is a bit soft and rotten. I personally prefer the harder one.
