While wandering around the Yongda Night Market, I happened to pass by this place called "Shaanxi Tongguan Roujiamo." Since I quite like Roujiamo, I decided to give it a try. The soul of Roujiamo lies in its crispy outer crust and tender stewed meat filling, paired with some green peppers for added flavor; the layers of taste must be on point.
The owner's accent is quite strong, and as soon as he spoke, it gave me the illusion of walking into a street stall in mainland China, which added to the atmosphere. When I took the first bite, the bread was crispy on the outside and soft on the inside, with a bit of chewiness, which was nice. The amount of meat in the filling was quite generous, fully stewed, but the flavor was relatively simple—not overwhelmingly aromatic, but at least the texture was solid and not dry.
In terms of seasoning, the presence of green peppers is very important; it helped balance the dish, preventing it from being too monotonous. However, the price is a bit high. Although prices at night markets have risen, this particular price made me hesitate a little. Overall, I would consider it a place to occasionally satisfy cravings, since Roujiamo isn't very common in Tainan, and if you want to try it, this is a good option.
