The owner went to Japan to learn the craft, and their signature dish is dipping noodles with side rice. The dipping sauce really has a Japanese flavor; it's not too salty on its own, but it pairs perfectly with the noodles. The noodles are chewy and firm, and the three-layered pork is tender and juicy. The ratio of side dishes is just right, making it hard to stop after one bite. I only regret not ordering a larger portion... I originally thought the side rice was just plain rice with bonito flakes or something simple, but I was surprised to find minced meat under the rice. After pouring a few spoonfuls of soup over it and mixing, it too was astonishingly delicious, truly the best side rice. Unfortunately, my first visit will also be my last, as the restaurant is closing after five years on March 15. The owner has really worked hard on their own.
