Er Ji Xuan Soy Milk is a late-night eatery I've been eating at since I was a child, and I believe it has at least a ten-year history. This place specializes in late-night snacks and breakfast, and it shouldn't be unfamiliar to those living near Dou-Nan. I used to especially love their scallion pancakes, rice balls, and egg pancakes, especially the rice balls; the flavor back then was truly delightful. The youtiao (fried dough) was crispy, while the pickled vegetables were particularly fresh, creating a very satisfying combination.

However, to be honest, I feel that their standards have somewhat declined in recent years. The texture of the rice balls seems to have become ordinary, and the youtiao isn't as crispy as before, resulting in a reduced overall aroma. Moreover, the pastries displayed at the counter are often cold and taste somewhat salty, giving a feeling of less attention to detail.

The main reason for my visit this time was that a friend mentioned to me that they recently had a very popular "tofu skin egg pancake" on Instagram, saying it was quite special. So, I decided to drop by and give it a try. I found that this tofu skin egg pancake is indeed quite rare; I should say it's the first time I've encountered an egg pancake that uses tofu skin instead of traditional pancake batter. However, the flavor was actually nothing special, and it didn't have much saltiness. I also noticed that it wasn't listed on the menu, and I had to order it directly from the auntie who makes the fried egg pancakes.
