Located at No. 135, Shangxiao Street, Hualien City, "Rare Delicacy Knife-Shaved Noodles" is a small noodle shop that specializes in knife-shaved noodles. The store is situated on the first floor of a multi-story building, with a simple and unadorned exterior that gives a homely feel. After seeing good reviews on Google, I decided to come and try it out.
Upon entering the shop, the dining environment is simple and clean, with a good number of local patrons. There are plenty of seats, but the space between tables is slightly narrow, so one needs to be careful when moving around. There is a refrigerator where you can select your preferred side dishes, with each plate priced around 35 NTD. I chose okra, dried tofu, and pig ears; while the flavors were average, they were still suitable as side dishes.
For the main course, I ordered the knife-shaved noodles with half tendon and half meat. The noodles are indeed hand-shaved, with uneven widths that add to the texture. The noodles are chewy and firm, making you want to have bite after bite. The broth is refreshing, with a moderate level of saltiness, and paired with beef tendon and beef, the meat is tender and melts in your mouth, complementing the noodles well. Additionally, I noticed that the table next to me ordered mu shu fried noodles and zhajiang noodles, which looked quite good.
In terms of pricing, the noodles here are about 110 NTD, which is considered affordable and offers good value for money. Overall, "Rare Delicacy Knife-Shaved Noodles" is a noodle shop worth trying. Both the texture of the noodles and the flavor of the broth are satisfying.
