I went to a hidden sushi restaurant in Umeda🍣
The restaurant is called Sushi Saigetsu, located a short walk above ground near the Izumi Square of Whity Umeda⛲️
It's on the 6th floor of a building, with a counter and private rooms✨
Many of the staff are fluent in English, and there are quite a few foreign tourists at the restaurant✨
I had the chef's special course today✨

As it decreased, I rolled it in nori and ate it all at once, which was also incredibly delicious❤️

The broth was flavorful, and the shijimi clams were tasty, making the red miso soup perfect, rich and delicious✨
Lastly,
I got to see their unique way of preparing bonito broth, which seemed to extract a rich flavor🐟
After taking out the first broth and drinking half, they added kelp for a flavor change✨
The first broth had a strong bonito aroma and was tasty🐟
Once the kelp was added, the flavor became complex again, making it delicious✨
I happily had plenty of refills, feeling very satisfied✨
