Located next to the bustling Susukino in Sapporo, this newly built structure is very convenient. The environment is clean, bright, and comfortable. The first floor is for standing dining, while the second and third floors have bar seating as well as private rooms, and the establishment offers private booking services. The owner's grandmother was a skilled sushi chef in a time when gender roles were strictly defined. The second-generation owner has inherited her grandmother's legacy, combining traditional Edomae sushi techniques with fresh local ingredients from Hokkaido, infused with innovative styles based on experiences abroad, creating a unique ambiance for the restaurant.

They only serve lunch on Sundays. I decided to stop by before heading to the airport and chose the lunchtime special sets priced at 2,000 yen and 3,500 yen. Everything was delicious, and the counter service adjusted the pace of the meal according to my speed. The standout dish was the additional sushi called "Hakkaku", a type of fish unique to Hokkaido and available only in winter. After a slight sear, taking a bite revealed a subtly charred flavor with a slight meatiness and rich fat—a texture I had never experienced before, truly delicious.

I chatted a bit with the owner, and the conclusion was that "the uglier the fish looks, the better it tastes"! Haha!
