After 7:30 PM, there are really fewer shops within walking distance near National Taiwan University Hospital, so when I saw this noodle shop still open, I decided to go in. I often passed by it during my student days but had never stepped through the door.

In addition to the commonly seen noodle dishes, this shop also sells pot-baked noodles. The ingredients for the pot-baked noodles are quite standard, and the freshness of the ingredients is average. However, at a price of less than 100 NT dollars in the prime area of Taipei, I suppose we can't ask for much. But what I find impressive is the bonito broth; it really is made with care, bringing out a true sweetness, not just made with powdered or chemical ingredients. So drinking it doesn't leave you thirsty; rather, it is the soul of the pot-baked noodles for the whole evening.

Besides pot-baked noodles, there are also some braised delicacies as side dishes that you can choose from. I later opted to take out a braised egg. Although egg prices have stabilized quite a bit now, the retail price is still around 15 NT dollars. I can only say that if the shop uses good eggs, the difference is less noticeable. However, if they use the cheapest traditional caged white eggs, the quality and price don't match up.
