🔖 Today I'm enjoying: Bue Mi . Lab🧪

This "Bue Mi . Lab" located in Tainan has an overall style that is minimalistic yet carries a sense of ritualistic beauty. Every detail, from the environment, tableware, to menu design reflects the care put in by the establishment. The menu also kindly indicates allergens, which is very friendly for those with dietary restrictions.

🍜 Main Dishes × 2
▪️ Non-toxic shrimp from Xuejia + Taiwanese sambal + mixed noodles with peeled chili
Spicy and flavorful, it whets the appetite, and comes with a bowl of laksa soup, making this dish a “two-in-one” experience.
▪️ Grilled beef cheek + Yunlin black garlic + Hong Kong-style pickled onion mixed noodles
The beef cheek is tender and aromatic, generously portioned! The accompanying “麻藥蛋” (Maharaja egg) was an unexpected delight, I finished it even though I’m not usually a fan of eggs!

🦐 Side Dishes × 2
▪️ Sweet potato shrimp cake + sriracha + Thai green tea
The shrimp cake is made with fresh ingredients, and the combination with sriracha sauce and green tea powder is very creative.
▪️ Three-color egg + peanut dried fish + seaweed
This dish features a base of tofu made from soy milk and seaweed, topped with century egg sauce and salted egg yolk, paired with peanut dried fish. I really liked this dish!

▪️ Salty lemon + Puli passion fruit + Ma gau sparkling drink
Sweet and sour refreshing, you can drop in Ma gau essential oil before drinking for an added aroma layer.

▪️ Lemon + olive oil white brownie + gongbo pepper
It’s suggested to eat it in layers to better appreciate the flavors of different ingredients; overall, it’s an interesting conclusion!

🌟2024/5月必比登🌟建議訂位,低消350,用餐一小時 我們僅是一間麵攤仔,沒有高級法餐 「麥謎食驗室Bue mi .Lab」使用台灣在地食材結合各國料理,以實驗及研發精神創作出新穎的麵食,不定時更換菜單,依季節性去變化,讓每道餐點都富有層次和風味,以網路訂位為主,想吃不一樣的特色麵食可以來品嚐看看。 位在青年路上的麥謎食驗室Bue mi .Lab,看進去低調又神秘,藍灰色調簡約色調,軟裝上皮椅和岩板桌面搭配上吊燈,明明是中午卻有一種夜晚約會的氛圍感,每一張桌子下面都有置物可以放包包。 上餐之前會給壓縮版溼紙巾來擦拭手,搭配泡開的水還是有山茶花的香氣,體驗感很好 雙人套餐 💰990 學甲白蝦、台參巴醬、剝皮辣椒 一碗麵用乾/濕兩種吃法,讓你體驗到不同樂趣,第一吃(乾吃)吃自製麵條和多種配料( 蛋酥、酸白菜、客家剝皮辣椒、海帶芽、薄荷和紫洋蔥絲)的香氣,不過上面滿滿的香菜(我哭慘,不愛香菜的記得要先問),第二吃(濕吃)品嚐完麵條和配料的香氣後加入用蝦頭去熬煮的高湯也可當成沾麵吃,濃厚又不死鹹,變成新加坡式叻沙麵,麵條Q彈有勁,帶有些許微辣香氣,我超愛。 豬軟骨肉·麵非麵·炸彈炸蛋 有一種中華拉麵的即視感,主食改成軟嫩好入味的豬軟骨,溏心蛋和米食(這個麵食就看各人了)口感有嚼勁,吃起來會比較久。 甜甜圈蝦餅·是拉差·泰式綠茶 若從外面上看來就是綠色甜甜圈,結果竟然是用學甲白蝦、檸檬葉、黑白豬加外皮裹泰式綠茶組合而成的,再擠上是拉差美乃滋製成糖霜,一口吃下鮮又脆彈口感,讓人超級驚豔的,不像蝦餅的甜甜圈。 蛋白豆腐·刺蔥·番茄 乍看以為是豆腐,其實它並非豆類製品,而是蛋白加入醬油、味霖,透過蒸烤方式做成近似豆腐的質地,細緻軟嫩! 宜蘭鴨賞·客家桔醬·南疆蕃茄 💰90 這道菜可以說是我印象最深也挺愛的配菜,蒜味麵包丁、南疆醃漬蕃茄、馬扎瑞拉起司、茶燻白文鵝,香氣四溢,非常下飯又下酒的小菜,超讚。 油風隔間肉·黑白木耳·青紫蘇 💰90 神仙鴨湯·米香八寶丸·山當歸 💰220 台灣蕉·越南咖啡·椰奶 結合台灣及東南亞食材製成椰奶布丁,使用越南咖啡香濃郁,有著多層次口感香蕉味搭上咖啡味苦甜滋味,以台灣布丁蛋糕成形,有特色。 綠皮開心果洛神花泡芙 (限量聯名) 💰95 每日冷泡茶 藻吧聯名限定合作限定啤酒 +💰240 以前去藻吧喝過想說體驗看看,以slaty dog為架構,小玉西瓜、甘草、接骨木花、玫瑰鹽、伏特加,喝起來很像加了楊桃汁,可能是甘草的回甘,有一種我不愛的口感。 心得:我想有時間我一定會再去造訪學甲麵,非常有創意的一間店,除了雙人套餐其他小菜都點,好像食材都是你想得到,結果又是這麽出乎預料。 如果是重視餐點:學甲面超讚,小菜都很有特色,調酒不是我的愛 如果是重視環境:乾淨,空間不大 重視停車:機車可停門口 汽車不太好可停 如果是重視廁所:有一間,很乾淨 如果是重視排隊:網路訂位 如果重視服務:還不錯,有問題都會給予回應,最後吃飯超過營業時間也讓我慢慢吃🥹(吃飯吃很慢的一個人,但我還是盡快塞完🤣 如果注重CP值:🌟🌟🌟🌟 (單純探討食物跟價格)
