Taipei Neihu - A newly opened noodle restaurant in July, specializing in pork knuckle noodle soup and beef noodle soup! The portion of pork knuckle is really large, but overall it's a bit salty.

The portion of pork knuckle is really huge! I was a bit shocked when it was served, as there were two large pieces of pork knuckle! It's marinated very well, the meat is tender, falls apart with a chopstick, and melts in your mouth. Unfortunately, the flavor is quite monotonous, mainly soy sauce; it would have been better with some Sichuan pepper or star anise. The pork knuckle consists of both lean and fatty meat, but due to the large portion, eating into the fatty skin part feels super greasy. The skin isn't very chewy, the texture is soft and mushy.
The noodles are served separately and appear to be fried sauce noodles, topped with shredded cucumber. This fried sauce is really salty; I almost couldn't take it towards the end. I chose thin noodles, but they feel a bit thick when eating, cooked to be quite chewy, which is nice.
Additionally, if you choose a large portion of noodles, I asked the boss, and he said it only means more noodles, while the amount of pork knuckle itself doesn't change.

🔹 Can accommodate about 14 people. There are 3 tables for two, 1 table for four, and 4 single seats.
🔹 Recently renovated, it's very new, bright, clean, and comfortable.

🔻 It's a small shop run by one boss, who keeps looking at his phone. The phone is connected to the shop's speakers, and it’s quite loud, making it feel noisy.
🔻 There's a condiment area, but I found the "sour cabbage" was out and not replenished.

🔹 The food is quite tasty, with large portions, but the price isn’t cheap. Unfortunately, it's overall a bit salty, and by the end, it was too rich and hard to handle! Also, there's a special seasoning called "Scallion Spicy" that I added, but it didn't make much difference. I hope the boss can adjust the salt ratio; I went home guzzling water and hope there will be improvements next time I come back.
