When in Tainan and craving oyster dishes, Yang Oyster House is a well-known old restaurant that specializes in a variety of oyster delicacies, ranging from basic styles to less common preparations. The atmosphere in the restaurant is typical of a Taiwanese seafood eatery, with many seats and a large crowd, allowing diners to feel the vibrant local hustle and bustle.
This time, we ordered oyster omelet, steamed vegetables, oyster fried rice, and the salted crispy fried oysters, which are nearly ordered at every table in the restaurant. The oyster omelet has a slightly crispy outer layer, with a chewy batter that, when paired with a sweet and savory sauce, presents the familiar taste of Tainan. The oysters are generously portioned, allowing you to savor their freshness.
The oyster fried rice is a less common preparation, featuring a nice wok hei and distinct grains of rice. The addition of oysters brings a sweet and briny flavor from the sea, and although the seasoning isn't particularly heavy, it becomes increasingly enjoyable with each bite. The steamed vegetables were relatively ordinary in comparison.
The most delightful surprise was the salted crispy fried oysters. The outer layer is coated in batter and fried to a crisp, creating a texture very reminiscent of salted crispy chicken; it is fragrant and has a hint of pepper salt. Yet, when bitten into, it reveals juicy oysters inside, with the ocean's flavor bursting forth. This contrast is quite fascinating, making it no wonder why it has become a must-order signature dish. Compared to traditional methods, this dish resembles a fusion of night market salted crispy chicken and seafood cuisine.
