Located within the Donggang Overseas Chinese Market, the Rui Zi Hao Flagfish Tempura is one of the must-try snacks for many tourists visiting the market. The market is bustling and lively, filled with seafood vendors, and Rui Zi Hao's stall is always surrounded by the enticing aroma of frying. It’s hard not to be drawn in and stop by as you pass, and there’s always a long queue. This time, we sampled the two classic signature dishes: the flagfish tempura and the squid balls, both freshly fried and piping hot.

When the flagfish tempura is served, its outer layer is slightly crispy and beautifully golden, emitting a subtle flagfish aroma. Biting into it reveals a thin, crunchy exterior while the filling is soft and elastic. The ratio of fish paste is just right, and there are pieces of boiled egg inside. The flagfish flavor isn’t overwhelmingly strong, but it offers a delicious taste that makes you want to take another bite. Dipped in the commonly found sweet soy sauce or a bit of wasabi, it adds even more depth to the flavor.

Next, the squid balls, just fried, have a slightly crispy exterior and a bouncy, juicy interior, and you can really taste chunks of squid in them.
