This sushi restaurant is managed by the "One Stone, Three Birds" group.
It is a trending place where chefs from Michelin backgrounds prepare sushi.
Sourcing ingredients directly from Toyama Bay, which is connected to the head chef, without going through Toyosu or Tsukiji, they offer carefully selected toppings from around 500 types of fish. The interior features an elegant counter and is reservation-only with three seating times. Many customers come as couples, making it perfect for dates 💓. The portion sizes in the courses are just right, even for women!

    → Each dish is intricately prepared; the fish roe is incredibly tasty. The persimmon and mascarpone miso pickle has a strong miso flavor with sweet persimmon, creating a perfect blend. The Jerusalem artichoke and tentacles have an ideal crunch and chewiness!

  • Simmered Menuke
    → Menuke is a deep-sea fish and a premium fish. It melts in the mouth and is soft, absorbing flavor well — simply outstanding.

  • Tuna Yukke
    → A three-layer structure of rice, tuna, and egg 🥚. The egg is marinated in soy sauce and is rich in flavor! It has an amazing sheen.

  • Clam Red Miso Soup

    → Even though it's steamed egg, it's incredibly delicious—so much so, you might think it's dessert! Sweet and tasty.
