Located on Guangfu North Road, Nanling Delicate Noodle House features a simple but clean and bright decor, giving patrons a sense of comfort to sit down and enjoy a bowl of noodles. There is a self-service tea area, and although I initially wanted to order thin noodles, only wide noodles were available that day. While it was a small disappointment, overall, the experience was quite pleasant.

This dish is the house specialty. The bowl contains five large pieces of beef, each thick yet incredibly tender, melting in your mouth without being tough at all. The broth is the soul of this dish: rich but not heavy, with a subtle herbal aroma that is sweet and easy to drink, leaving a refreshing finish. The wide noodles are chewy and bouncy, perfectly clinging to the broth, allowing you to taste the fusion of noodle fragrance and beef soup with every bite, remaining enjoyable until the end.

Three Treasures Beef Noodles
If you find the single beef option a bit monotonous, you can try the three treasures variation. This bowl combines beef shank, beef tripe, and beef tendons, each showcasing different textures: the shank is firm yet tender; the tripe is cleaned well, soft but still has a good chew; the tendons are rich in gelatin, melting in your mouth without sticking to your teeth. Tasting all three parts together adds more depth to the dish. The broth is consistent with the braised beef noodles, equally sweet and smooth!

Century Egg Dumpling Noodles
The noodles are dressed in century egg sauce, generously portioned, allowing each strand to be coated in rich century egg flavor. The dumplings themselves are average—not particularly impressive, but not disappointing either. If you love century eggs, you should enjoy this unique flavor; however, those with a lower tolerance for century eggs may find it a bit too heavy.

Overall, Nanling Delicate Noodle House excels in its beef noodle offerings, whether it's the simple braised beef noodles or the more varied three treasures beef noodles, both showcasing a balance of tender meat and smooth broth. Although I had to settle for the wide noodles temporarily, they still delivered a satisfying chew and fullness. As for the century egg dumpling noodles, it’s a small adventure in flavors, suitable for those looking to try something different or crave bold tastes.
