Located near Nanjing Sanmin Station, Nanling Delicate Noodle House may have relatively high prices compared to typical noodle shops, but the quality of ingredients justifies the cost, focusing on meat quality and broth. The environment is clean, giving a slightly refined restaurant atmosphere rather than the casual feel of a traditional street-side noodle shop.
“Beef Three Treasures Noodles”
This dish serves as the house special, combining beef shank, beef tripe, and beef tendon. The broth is outstanding, with a subtle herbal aroma and a rich, sweet flavor from the red-braised style—definitely not overly salty. Each type of beef has its unique characteristics: the beef shank is thickly sliced and firm; the beef tripe is soft yet retains a good bite; the beef tendon melts in your mouth with its rich gelatin. The only minor drawback is the portion size, which might be overwhelming for those with smaller appetites. At $300 for a bowl, it isn't cheap, but the quality of ingredients and broth certainly reflects this value.
“Red Braised Beef Noodles”
Like the Three Treasures Noodles, this dish also delivers high quality. The red-braised broth is rich yet not greasy, with a complex flavor profile. The beef is cut into large pieces but is stewed to be tender and juicy, almost melting in the mouth, with a delightful beefy aroma. Paired with springy, chewy noodles, the rhythm of sipping broth and chewing noodles is very satisfying. If you simply want beef noodles, this dish is actually more suitable than the Three Treasures Noodles due to its stronger focus.
“Century Egg Dumpling Noodles”
The century egg sauce is rich and aromatic, with a thick salty flavor and a slightly sticky texture, making it perfect for century egg lovers. However, the dumpling filling has a hint of pepper, and the accompanying sauce is a bit sour and spicy. Although the portion is generous, the main feature of this dish is the "century egg sauce" rather than the dumplings themselves.
Side Dishes (Mushrooms, Dried Tofu, Peanuts)
The mushrooms are crisp and refreshing, while the dried tofu and peanuts are well-seasoned, serving as competent accompaniments to the main dish. However, considering the price of the side dishes, they are indeed slightly higher than at average noodle shops.
Although Nanling Delicate Noodle House considers itself a "noodle shop," it is actually closer to the standard of a mid-range restaurant, excelling in the quality of broth and beef, which certainly satisfies diners with high standards for beef noodles. The downsides are the portion sizes and prices; guests with smaller appetites or limited budgets might find it "delicious but too much" or "delicious but a bit pricey."
I recommend newcomers start with the red braised beef noodles to directly experience the quality of the broth and meat. For those with a hearty appetite or wanting to try different cuts, the Beef Three Treasures Noodles are also worth the challenge. The dumpling series is a bit more niche and might appeal to those who love century eggs or bold flavors.
