Miaochang Crispy Oyster Omelette has recently gained popularity due to recommendations from internet celebrities, so I specifically went to Yongkang Yongda Night Market to give it a try. Upon arrival, I was immediately attracted by the announcements on the wall, which specifically stated that the size of the oysters would vary with the season and that they are not larger just because of special treatment for influencers. When my oyster omelette was served, I took a look and indeed found the oysters to be quite mini. Well... the shop's statement was accurate; it really had nothing to do with influencers.

Although the oysters were small, the crispy shell of this dish was truly impressive. It was fried to a nice thin crispness, and biting into it produced a satisfying crunch, which significantly enhanced the overall experience. Their sauce was also perfectly balanced—not too sweet, with a bit of saltiness. Adding a little chili really amplified the overall flavor. After finishing, I felt that the soul of this oyster omelette was truly not in the size of the oysters, but rather in the combination of the crispy shell and the sauce.

There were quite a few people there, but the turnover rate was fast, so the wait time was quite acceptable.

Overall, Miaochang Crispy Oyster Omelette is the best I've had at a night market in Tainan recently, especially since the crispy shell is quite distinctive and the seasoning of the sauce is good. If the oysters were a bit larger, it would surely be the perfect night market snack. However, just the crispy shell alone makes it well worth a try.

A bit disappointing. The idea is good, but most of the food in different stalls (tested 3) is pretty average and oily. Nothing else to do inside. But nice picnic table to spend some time with friends. Prices are ok.
