The frequently visited Fish and Water is the third store of "Citrus Shinn." When there are many people, you need to fill out information at the entrance to queue up, and when it’s your turn, you can go in to operate the ordering machine.

We almost always order the light citrus salmon ramen, which features a unique broth made from the citrus fragrance blended with squid and scallops. There’s a three-minute hourglass on the table that you flip when the dish is served, reminding you to remove the citrus and lemon slices to prevent the bitterness of the peels from being released.

Hanging on the edge of the bowl was originally the fin of a flounder, which was truly a perfect match. But for some reason this time it was switched to miso bonito (there's a notice posted at the entrance about it), which slightly detracted from the pairing.
This time, a new product, "Citrus Sparkling Sake Drink," was added. The bottom is syrup that needs to be mixed, and it pairs perfectly with this type of ramen! It might also go well with sake.
When waiting for the meal, there is hot clear broth available for self-service, which can also be used to adjust the broth's thickness.
