Yongchuan Beef Noodles is located on Minquan Road next to the Xinming Market in Zhongli.

Xinming Beef Noodles in Zhongli, Taoyuan, is famous all over Taiwan, but the number of locals visiting Yongchuan is significantly higher.

Today, I enjoyed the Sichuan-style beef noodles, priced at 160 NTD.

Sichuan Beef Noodles:
Upon entering the store, you can see various slogans next to the menu, which seriously describe the "heavy salty flavor of the Sichuan broth."
But how salty is it really? I can only say it’s comparably salty.

The slightly thick square noodles have a good chew, but the salinity of the broth is truly astonishing. If you taste it carefully, you'll realize that it's not just plain saltiness, but rather a salty flavor with a spicy base.
The spiciness is quite refreshing, but the saltiness is really not a style that most people can accept.

The restaurant provides pickled vegetables as an optional ingredient to adjust the flavor, which is actually a nice addition. However, if you really want to reduce the saltiness, you'll need to take your bowl to ask the staff for more broth.
After adjusting the saltiness, the overall taste becomes quite pleasant, and you can better enjoy the rich flavor of this bowl of noodles.

The meat chunks are large and satisfying, leaning toward an old-fashioned beef style with big, tough pieces and plenty of chewiness. Not everyone may like it, but at least I find it quite good.

You can add noodles once, and as for the broth, I believe you can keep asking for more.
However, the most important thing is to please not waste.

Overall, this is the most well-known beef noodle shop in the Zhongli area.
The restaurant has been serving for over sixty years, with more than ten thousand reviews on Google, twice that of the neighboring Xinming Beef Noodles.
While it is heavily salted in Sichuan fashion, they do provide ways for customers to adjust the flavor.
The restaurant is even open 24 hours, so you can eat any time you have the chance.
If you visit or pass through Zhongli, you might as well come and give it a try.
