Fish maw is the swim bladder of fish like abalone, ginseng, fins, and belly. It is selected from high-quality wild perch swim bladders, which cost over ten thousand dollars per pound and are known for replenishing qi and blood, nourishing the complexion, and tonifying the kidneys. It is rich in protein, collagen, calcium, and iron, making it particularly suitable for Taiwanese women after being developed by the company, hence it's called "Jiao" (meaning "like a woman"). The chicken soup base is really rich and flavorful, with tender chicken and a rich pudding dessert. All the hot pot ingredients and vegetables are very fresh and beautifully presented, giving a sense of luxury. Overall, the food is quite delicious, though the prices are certainly high-end as well.
