There was a time when "Menqian Yinshi" received constant news reports and recommendations from influencers. Their design and marketing were indeed very impressive, and it became difficult to secure a reservation. The videos featured many loyal customers, making one wonder if the hype was exaggerated? It wasn't until they opened the Ximen branch that I was able to walk in and dine, so I decided to give it a try and see what the quality was like.

Before being seated, the front desk staff asked for a phone number and last name, which seemed entirely unnecessary and likely just for marketing purposes. After being seated, we ordered via a QR code, which included options in Chinese, English, Japanese, and Korean. The seating setup was similar to Ichiran Ramen, with single seats separated by bamboo curtains for service. I ordered the basic "Dream Three Treasures Beef Noodles," which cost 299 NT plus a 10% service charge, putting it at a mid-to-high price point. You could also customize the noodle thickness (I chose wide noodles) and whether to add red and white radishes and pickled vegetables.

Perhaps just for marketing reasons, when the staff lifted the bamboo curtain to serve, they also loudly proclaimed, "The broth has been refined for over 2,000 days."

This broth is different from the typical Taiwanese beef noodle soup; it doesn't have the heavy flavors of braised or clear broth, is not overly salty or intense, and it does not achieve the gelatinous consistency as advertised. Instead, it boasts a warm, rich broth with a subtle tomato base flavor hidden within. While it may not have a distinct guiding flavor, it is still quite pleasant and easy to finish.

However, the beef and beef tendon were indeed impressive, incredibly tender and flavorful, with meat that was not dry at all—almost melting in the mouth. Even the red and white radishes were braised thoroughly and met high expectations. The beef tripe performed normally, and the pickled vegetables were merely a small side dish, not playing a significant role.

Taipei is a region where it's relatively easy to find good beef noodle soup, but one can still encounter restaurants where the meat is not braised enough. If Menqian Yinshi can maintain this level of quality, it will be a great dining option.
