This shop, Tofudokoro, is a chain specializing in bean curd sushi that comes from Osaka and has been around for over 50 years. On the day I was taking a long-distance Shinkansen, I hesitated about which bento to buy and saw everyone lining up at this place.
While waiting in line, I could see the staff making the sushi fresh in the display window, with piles of sushi stacked high. I initially thought that bean curd sushi wasn't something special, but there turned out to be an incredible variety of flavors!
There were at least seven or eight types available, and every month there are limited-time flavors. The Tokyo Station limited edition features soy-stewed tuna, and the red bean curd with its embossed pattern resembles the cute red brick design of Tokyo Station.
The Tokyo Station limited edition offers five flavor options, where sweet bean curd wraps various mixed rice fillings, each with its own characteristics. However, one of them has a wasabi flavor, which, although not too spicy, might be better to order separately for those who aren't fans!
Although you have to wait in line, the process is actually quite fast, as most people just grab their bento and head to the checkout. The staff is very friendly, and after ordering, they wrap your bento beautifully in paper and use a plastic bag to prevent any leakage, making it very convenient to eat on the train. They even provide a bag for your trash afterward. I highly recommend it!
