First, the conclusion: It’s really not easy to find a delicious eel noodle dish in the Taipei area. As a student from Tainan (?), I’ve had my struggles, but I still found it! This place, "Chiayi Eel Noodles," I would be willing to eat over and over again!

"Chiayi Eel Noodles" is located in the Yonghe District of New Taipei City, approximately between the Yonghe Biang Biang Department Store and the Lehua Night Market, quite a distance from the MRT station, making it a bit inconvenient for transportation.

The shop is small and not very noticeable; you wouldn't expect that such a delicious eel noodle shop was hidden here.

The evening opening time is 5:00 PM. I arrived at 5:00 PM, becoming the first group of customers, but within just 10 minutes, the 6-7 tables inside were already full. There were also quite a few takeout customers, so the popularity is considerable!

Stir-fried Eel Noodles $130
The stir-fried eel oil noodles are slightly cheaper at $110, but if you're having eel noodles, you must have it with the regular noodles!!!
The portion of the noodles is super large!!! I later discovered that they actually put in two full packs of noodles!
The eel noodles here have a Southern flavor; the stir-fried dish is slightly spicy, yet you can still taste the sweetness (I love it~~). The spicy, salty, and sweet flavors blend together, especially with the addition of onions and Thai basil being stir-fried with aroma, which is absolutely amazing!
Although the quantity of eel isn't very much, each piece is crunchy and delicious. If you want more eel, you can order an additional plate of stir-fried eel~

Stir-fried Eel $150
The flavor of the stir-fried eel is slightly different from the stir-fried eel noodles; the pepper flavor is more pronounced, and the sweetness is lower. The eel is still very crunchy and tasty, and they put a ton of onions, so those who love onions will really enjoy it!

Actually, just one plate of noodles is quite filling, but being greedy as we are, we ordered another plate of stir-fried eel to share. The conclusion is that if two people come to eat (assuming neither has a large appetite), it’s recommended to order one plate of noodles + one plate of stir-fried eel, and you’ll be perfectly satisfied!

Another unique feature of this shop is that as soon as you sit down, the owner will serve you a pot of bonito soup. The taste of the bonito is very strong and sweet, and they give you a whole pot, so you can drink as much as you like, and it keeps warm. Eating it with the eel noodles is very satisfying!

The only tiny, tiny drawback is that the stir-fried eel noodles are a bit oilier, so you may feel a little thirsty afterwards, but it doesn’t at all decrease my love for this shop. I would still willingly travel here to eat!
