Casa Bar in Chiayi is an old establishment that has been locally operated for over a decade. For many, it has become more than just a drinking spot; it’s a part of the city's nightlife. Recently, after moving from its original location, the space's style shifted to a predominantly black, cool-toned, and minimalist design, with sharp lines and subdued lighting, giving an understated and rational vibe at first glance. However, what truly keeps this place alive with character is the owner himself—who has his own ideas about local revitalization, local industry, and flavor translation.

The drink menu at Casa does not simply focus on what is "delicious" or "trendy," but rather it reflects a coherent design context. This time, I ordered two drinks. The first drink was from a more mainstream menu, based on rum, paired with pineapple and mulberry juice. The taste was a balanced blend of sweet and sour, with a clear but not overwhelming fruit aroma, and the rum's presence was just right, making it refreshing and easy to drink, suitable even for those who don’t often enjoy cocktails.

The second drink came from a more experimental menu, using mezcal as the base spirit, which already has a smoky character. Paired with a salted caramel rim, the flavor layers instantly opened up. The initial taste was a mix of caramel sweetness and saltiness, followed by the strong and direct flavor impact of the mezcal—it's bold, wild, and memorable.

Overall, Casa Bar is not just about selling drinks; it's more like storytelling through cocktails. From the space to the drink menu, one can feel the operator's contemplation of the locality, flavor, and culture. If you're looking for cocktails in Chiayi that are not just "good to drink," but also have a perspective and attitude, Casa is a place worth experiencing slowly.
