Located in Shilin Night Market, closer to the Jian Tan MRT exit, I happened to see this stall and decided to try it since I wasn't sure what to eat.

The flavor isn't too salty (I've had some before that were heavily seasoned with sauces). The scallion pancake is fried crispy, and the egg is semi-cooked, so it might burst when you bite into it—be careful while eating. However, the shop provides napkins, which is quite considerate. They also offer options for German sausage, Korean kimchi, golden kimchi, or you can add an egg or spice it up.
Overall, it's decent, but I wouldn't go out of my way to revisit.
